I was a bit lazy this Sunday morning, because my little “Dragon” woke me up at 6 am. Well, at least he let me sleep continuously through the night. Anyway, I decided instead of standing and making my pancakes, I will try something new. I had the cottage cheese waiting for me in the fridge so I mixed almost the same ingredients and let the oven do the work for me. Surprisingly, I liked the pie taste better than the pancakes, since it is more tender.
The cinnamon in the recipe is to increase the insulin sensitivity.
Preparation time: ~10 minutes. Baking time: ~45 minutes.
INGREDIENTS:
- Eggs – 3 large
- Pressed Cottage Cheese – 500 grams
- Cinnamon (ground) – 1 tablespoon
- Oatmeal (quick oats) -3 tablespoon
- Havarti Cheese – 1.5 slices ~40 grams
- Coconut Oil – for 8″ round pan
INSTRUCTIONS:
Preheat oven to 360F. In a large bowl mix eggs, cheeses, cinnamon and oatmeal to a uniform paste. Transfer the content of the bowl on a baking paper (in the 8″ round pan) greased with coconut oil. Bake for ~40 minutes. Last 5 minutes I switch to broil to form a crust on top.
The whole recipe is ~1 serving of carbs (15 grams).
