Mini Spinach Quiche

One of the things that I like, is to try something new. If it is to taste a new ice cream flavor, a new dish in a restaurant or even visit a new place. There is always the excitement of a new experience and feelings, that I did not have before.

Today, I tried for the first time to make a dish with spinach. I searched online for a good recipe, but quickly realized that I better formulate something myself. Common! The online spinach recipes have about 10 ingredients in it. Really?  It is too complicated, to my opinion. Great things are simple. Anyway, I think mine was a success, because by the end of the day nothing was left :).

Preparation time: ~10 minutes. Baking time: ~50 minutes.

INGREDIENTS:  ~10-11 mini spinach quiches

  • Spinach fresh- 450 grams, cooked for two minutes, drained and chopped
  • Eggs – 4 large
  • Feta Cheese  – 100 grams, chopped
  • Parmesan Cheese – 1 tablespoon
  • Havarti Cheese – 1.5 slices ~50 grams, chopped
  • Oatmeal (quick oats) -4 tablespoon
  • Oil – for pan

INSTRUCTIONS:

Preheat oven to 360F. In a large bowl mix spinach, eggs, cheeses, and oatmeal to a uniform paste. Transfer the content of the bowl on the mini pans greased with oil. Bake for ~50 minutes.

One mini spinach quiche is less than 1/3 serving of carbs (5 g of carbs)  and 120 calories.

    1. Thank you Kim! Oh I like the creamy texture of the cheeses too. It will probably work as one large as well. Just try it. That is what I do. I just had the mini quiche pan that was not used and I finnaly found a use for it :). Let me know if the large one works out 🙂

There is a time and place for trying out things on the more ‘complicated’ side, but simple is beautiful! I guess it’s one of the many reasons I think you’re so awesome!

      Thank you for your kind words and the sweetest comment :). It was probably one of my first recipes trying to incorporate spinach. I think that it is a good habit to be open-minded and try something new. Recently, I made a green pasta sauce based on spinach, so another experiment in my kitchen.
