Making cheese pancakes without flour is a real challenge! If you like to solve daily life problems, that one is a good start. There are several reasons to avoid flour. First, flour is highly processed ingredient and should be avoided by people with diabetes. Flour has high glycemic index that will skyrocket your blood sugar.
After conducting a few experiments in the kitchen, today I finally nailed a simple combination that did not fall apart and was tasty. The cinnamon in the recipe is to increase the insulin sensitivity.
INGREDIENTS: ~20 mini cheese pancakes.
- Eggs – 2 large
- Pressed Cottage Cheese – 500 grams
- Cinnamon (ground) – 1 teaspoon
- Oatmeal (quick oats) -3 tablespoon
- Havarti Cheese – 1.5 slices ~40 grams
- Oil – for pan
In a large bowl mix eggs, cheeses, cinnamon and oatmeal to a uniform paste. Using an ice-scream spoon as the measurement size, form mini balls with hands and place on preheated oiled pan. Flip after a hard crust has been formed. To absorb the oil, place on a plate with paper towels.
The whole recipe is ~1 serving of carbs (15 grams).
