I was unsure how to name these bars, so I asked my FB friends to help me out and that any name suggestion would be appreciated. Well, little did I know, but as a response, I only got hilarious names for the bars. The name suggestions were quite creative: “make more“, “when healthy meets yummy“, “peanuts, and nuts walk into a bar” or “gone with the wind” since they were gone so fast. It was a lesson for me for next time to ask for serious name suggestions only.
As usual, there is no added sugar in these bars, and I used monk fruit sweetener instead. Even though it seems like there are a lot of ingredients in the recipe, the recipe is easy to follow. It is an excellent healthy snack, and at home, I continually hear the fridge door open to grab some more bars.
Preparation time: ~15 minutes. Baking time: ~22 minutes.
INGREDIENTS: ~ 18 servings
- Pumpkin seeds – 1/4 cup
- Sunflower seeds – 1/4 cup
- Sliced almonds – 1/2 cup
- Walnuts – 1/2 cup
- Black sesame seeds – 1 teaspoon
- Pure peanut butter – 1/2 cup
- Coconut oil – 2 tablespoons
- Monk fruit sweetener – 1/4 cup
- Pure vanilla extract – 1 teaspoon
- Almond flour- 1/3 cup
- Egg whites – 3 large
- Oats – 3 tablespoons
INSTRUCTIONS:
Preheat oven to 350°F. Roast the seeds and nuts in the oven for about 10 minutes and allow to cool completely to room temperature. Chop the roasted nut mix to a finer size. The roasted nuts were so brittle that I just pressed with my hands the parchment paper and broke them into smaller pieces.
In a large bowl, add peanut butter and coconut oil and microwave for 30 seconds until the oil melts. Mix well and stir in the monk fruit sweetener and vanilla extract. Add almond flour and mix well. Allow the peanut butter mixture to cool down to room temperature before adding the egg whites. Finally, add the oats and cooled roasted nut mix and combine well. Transfer the mixture to a square tray (8″x8″) with parchment paper. Bake in the oven at 350°F for 22 minutes. Allow to cool before slicing into 18 bars.
One low carb nut mix bar is about 4.5 g of carbs (out of the 4.5 g carbs, 1.9 g is fiber so about 2.6 g digestible carbs), 11.9 g of fat, and ~143 calories, most of the calories come from fat.

Your suggestions are very creative and funny. Make me smile 🙂 I was pondering about the names for at least a day until I decided to go with this one. I use the egg whites to bind it all together and to add some volume to the bars. What would you use instead of the egg whites?

I have a package substitute (Bob’s Mill brand) or whip up a flax “egg” (ground flaxseed + water)—both are neutral flavor but act as a good binder.
