I make those cookies when I want to spoil my son. We don’t keep any sweets at home, so most of it are homemade. The cinnamon in the recipe is to increase the insulin sensitivity.
Preparation time: 10 minutes. Baking time: 20 minutes.
INGREDIENTS: ~16 cookies.
- Cinnamon (ground) – 1 tablespoon
- Sesame seeds – 1 tablespoon
- Oatmeal (quick oats) – 1 cup
- Banana – 2 large
- Egg – 1 large
Preheat oven to 360F. With a fork mash the bananas in a large bowl. Combine the rest of the ingredients and mix uniformly. Spread coconut oil on a baking paper. With a table spoon, place the mixture on the baking paper. Bake for ~20 minutes.
Two cookies are ~1 serving of carbs (16 g of carbs, 2.5 g of fiber and 90 calories).
